Spinach and Garlic Scape Pesto
Ingredients
- 3 cups packed fresh spinach leaves
- 1⁄2 cup parsley leaves
- 2/3 cup grated parmesan cheese
- 1⁄2 cup walnuts
- 6-8 chopped garlic scapes
- 2 Tbs. basil (optional)
- 1 cup extra virgin olive oil
Directions
Place all ingredients on a blender or food processor (in 1 or 2 batches depending on your set-up). Drizzle in the oil once the other ingredients are broken down. Process until smooth.
